Yet Another Taste of Fall

Hola amigos.

Here is the recap of yesterday…

Breakfast. (It was just something quick because I was on the way to the library)


Lunch. (Hit up the commissary for the week and had the sushi people make me a brown rice California roll. My favorite!)


And then it was Pumpkin Crumble time!!

I made this recipe a really long time ago, but it was AMAZING.

What you need:


1 (28 oz.) can pumpkin
1 lg. can evaporated milk
1 c. sugar
3 eggs
4 tsp. pumpkin pie spice
1 tsp. salt
1 pkg. yellow cake mix
3/4 c. melted butter
1/2 c. chopped pecans
1/3 c. butterscotch chips

How to make:

Combine pumpkin,milk, sugar, eggs, pumpkin pie spice and salt together.


Pour into a 9″x13″ baking dish. Sprinkle cake mix on top; drizzle butter onto cake mix. Add pecans and butterscotch chips.


Bake at 350 degrees for 50 mins or until it is cooked through!


Yum! I love everything pumpkin. I’m definitely bringing this thing to work with me 🙂

Along with more pumpkin comes more gas masks. We have another exercise this week. I just can’t get away from them! Wish me luck and adios!
